Leigh’s Post Oak Peach Cobbler: Preheat oven to 375 degrees Farenheit. Blanch, peel, and slice about 5 or 6 big peaches. Simmer them with 1 cup of sugar for 3-5 minutes (or substitute 3-4 cups canned peaches with their juices). In a large bowl, stir together 1 cup flour, 3 Tbsp sugar, 1.5 tsp baking powder, 1/4 tsp cinnamon, and 1/4 tsp salt. Incorporate 1 beaten egg and 1/3 cup milk until you have a slightly doughy batter. Place the peaches and their juices in a baking dish and spoon the batter on top (make sure to spread it out so that it will cook evenly). Put it in the oven for 15-20 minutes until the topping is cooked through. Serve with vanilla ice cream and enjoy!
