These are mini pink lemonade cupcakes, in tiny ice cream cones. I made them for a friend’s birthday. She’s not a librarian, but almost as awesome as one.
I’m a librarian (academic) and love to bake, but have been intimidated by pies ever since a bad 4H pie crust experience! A friend of ours just moved, and she gave me several frozen pie crusts, so I went for it and made my husband’s fave, apple (Fuji and Granny Smith mix), it worked!! ~ Sara T. PS: I am only evil when students fall asleep in my IL sessions not when I bake!

Instead of using the Mexican chocolate discs the recipe calls for, I used about 3-4 oz. of the Mexican candy bar Carlos V, (not as sweet as American chocolate candy bars). And I added some chopped pecans.
Oatmeal cookies with dark chocolate and tart cherry pieces as made by a digital projects librarian. Delicious!
